This epic banana coffee cake has everything you could ever imagine.

  • 2 cups Pamela's pancake & baking mix
  • ½ cup butter, softened
  • ¼ cup coconut oil
  • 1 cup palm sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 bananas, mashed
  • ½ cup of cream cheese, softened
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup shredded organic coconut
  • 1 cup of chopped roasted macadamia nuts (not salted)
  • Topping:
  • 1 cup semi-sweet chocolate chips
  • ⅜ cup palm sugar
  • 2 tsp cinnamon
  1. Preheat oven to 350 degrees
  2. In a small bowl mix topping ingredients together and set aside
  3. In a large bowl mix Pamela's Mix, sugar, cinnamon, and nutmeg
  4. Cream softened butter and coconut oil and slowly add to dry mixture, stirring with a fork to create a crumble like texture.
  5. Take 1-1/2 cups of the crumble mixture and and press into the bottom of an ungreased 9x13 pan
  6. Sprinkle ½ cup roasted macadamia nuts over crust
  7. In the remaining crumble mixture add shredded coconut
  8. Take ½ cup of the crumble mixture out and set aside
  9. To the remaining crumble mixture add banana and cream thoroughly, eggs one at a time creaming between, then cream in vanilla, and cream cheese.
  10. Pour half of the banana mixture over macadamias in pan
  11. Sprinkle in half of the topping mixture over banana mixture
  12. Pour remaining banana mixture
  13. Then sprinkle the remaining topping mix
  14. Sprinkle the reserved crumble mixture on top
  15. Finally, sprinkle the remaining macadamia nuts
  16. Bake for 40-45 minutes or until lightly golden
