Fully Loaded Banana Coffee Cake

This epic banana coffee cake has everything you could ever imagine.

  • 2 cups Pamela's pancake & baking mix
  • 1/2 cup butter softened
  • 1/4 cup coconut oil
  • 1 cup palm sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 bananas mashed
  • 1/2 cup of cream cheese softened
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup shredded organic coconut
  • 1 cup of chopped roasted macadamia nuts not salted
  • Topping:
  • 1 cup semi-sweet chocolate chips
  • 3/8 cup palm sugar
  • 2 tsp cinnamon


  • Preheat oven to 350 degrees
  • In a small bowl mix topping ingredients together and set aside
  • In a large bowl mix Pamela's Mix, sugar, cinnamon, and nutmeg
  • Cream softened butter and coconut oil and slowly add to dry mixture, stirring with a fork to create a crumble like texture.
  • Take 1-1/2 cups of the crumble mixture and and press into the bottom of an ungreased 9x13 pan
  • Sprinkle 1/2 cup roasted macadamia nuts over crust
  • In the remaining crumble mixture add shredded coconut
  • Take 1/2 cup of the crumble mixture out and set aside
  • To the remaining crumble mixture add banana and cream thoroughly, eggs one at a time creaming between, then cream in vanilla, and cream cheese.
  • Pour half of the banana mixture over macadamias in pan
  • Sprinkle in half of the topping mixture over banana mixture
  • Pour remaining banana mixture
  • Then sprinkle the remaining topping mix
  • Sprinkle the reserved crumble mixture on top
  • Finally, sprinkle the remaining macadamia nuts
  • Bake for 40-45 minutes or until lightly golden
