Fully Loaded Banana Coffee Cake
This epic banana coffee cake has everything you could ever imagine.
Ingredients
- 2 cups Pamela's pancake & baking mix
- 1/2 cup butter softened
- 1/4 cup coconut oil
- 1 cup palm sugar
- 2 large eggs
- 1 tsp vanilla
- 2 bananas mashed
- 1/2 cup of cream cheese softened
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup shredded organic coconut
- 1 cup of chopped roasted macadamia nuts not salted
- Topping:
- 1 cup semi-sweet chocolate chips
- 3/8 cup palm sugar
- 2 tsp cinnamon
Instructions
- Preheat oven to 350 degrees
- In a small bowl mix topping ingredients together and set aside
- In a large bowl mix Pamela's Mix, sugar, cinnamon, and nutmeg
- Cream softened butter and coconut oil and slowly add to dry mixture, stirring with a fork to create a crumble like texture.
- Take 1-1/2 cups of the crumble mixture and and press into the bottom of an ungreased 9x13 pan
- Sprinkle 1/2 cup roasted macadamia nuts over crust
- In the remaining crumble mixture add shredded coconut
- Take 1/2 cup of the crumble mixture out and set aside
- To the remaining crumble mixture add banana and cream thoroughly, eggs one at a time creaming between, then cream in vanilla, and cream cheese.
- Pour half of the banana mixture over macadamias in pan
- Sprinkle in half of the topping mixture over banana mixture
- Pour remaining banana mixture
- Then sprinkle the remaining topping mix
- Sprinkle the reserved crumble mixture on top
- Finally, sprinkle the remaining macadamia nuts
- Bake for 40-45 minutes or until lightly golden
